Carne Asada (Steak Tacos)

Prep Time15 minutes mins
Cook Time35 minutes mins
Course: dinner, tacos
Cuisine: Mexican
Keyword: blackstone griddle tacos, carne asada, griddle tacos, steak tacos, steak tacos griddle
Servings: 6

Equipment

  • 2 Spatulas

Ingredients

  • 2 lb Chuck steak cut into cubes. I can get sliced chuck steak at Kroger and Meijer near me.
  • 1 tablespoon Seasoned Salt
  • ½ tablespoon Pepper
  • ½ tablespoon Garlic powder
  • 2 whole Lemons
  • salsa or hot sauce
  • 1 small White onion diced
  • 1 bunch Cilantro chopped
  • 16 Corn tortillas

Instructions

  • Put steak in the freezer for a half hour to make it easier to cut. Then cut your steak into ½ inch cubes.
  • Mix your salt, pepper, garlic powder, and juice of one lemon into the steak cubes. If you'd like you can cook one little piece of steak on the stove really quick to see if it's seasoned to your liking.
  • Preheat your griddle to 300-325 degrees. For me that's medium low on the middle two burners and low on the outside two burner for 10 minutes.
  • Place down your steak and spread it out thin. You want each piece of steak touching the griddle but also touching each other. Do not leave space in between each piece of steak.
  • Juices from the fat will start to render out. Push it back into the meat. You are trying to cook all the meat in the rendered fat.
  • Keep tossing the steak and pushing the fat back into the meat for 15 minutes, or until you no longer see fat coming out.
  • Once all the fat has rendered out push the steak to one corner to stay warm.
  • Scrape the griddle then throw down your corn tortillas to warm them up and make them more pliable and less likely to tear. It should only take about a minute per side.
  • Fill each tortilla with steak, cilantro, onions, salsa and a squeeze of lemon. Enjoy!

Hey Johnny! Saw this on YouTube and thought it looked amazing! I was going to try and get the recipe from here, but looks like it might not have made it on the page yet. Looking forward to when it lands and giving this a try on my griddle!

Hey, I'm Johnny!

My first job out of college was running a diner, where I learned how to cook on a griddle. When COVID hit, I bought a griddle for myself and started making YouTube videos. Five years and 18 million views later, I now teach griddling full time. I help everyday folks get the most out of their Blackstone by keeping it simple, beginner-friendly, and real. These aren’t viral recipes—just the kind of food you'd actually make for your family.
