Here are three key things to remember:
- Marinate your chicken for only 2-4 hours—any longer, and the acid in the dressing can start to break it down too much.
- Store-bought tzatziki works in a pinch, but the homemade version below is definitely worth the extra effort.
- Warm your pita in oil on the griddle—it takes them from good to amazing with a perfect golden brown crisp.

Chicken Gyros on a Blackstone
Easy chicken gyros on your blackstone griddle. This is a must make for beginner griddlers.
Servings: 6 gyros
Equipment
- 1 Spatula
Ingredients
Gyros:
- 1.5 lbs chicken breast cut into cubes (or thighs/tenders)
- ½ cup Greek dressing for marinade
- 1 tablespoon avocado oil for cooking
- 6 pita breads
- ½ cup tzatziki sauce see recipe below
- 1 cup shredded lettuce
- ½ small red onion thinly sliced
- 1 medium tomato diced
- ½ cup crumbled feta cheese
- Optional: Black olives, sliced
Tzatziki Sauce:
- 1 cup Greek yogurt plain, full-fat
- ½ cucumber grated and squeezed to remove excess water
- 1 clove garlic minced
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- 1 teaspoon fresh dill or ½ teaspoon dried
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
Marinate the Chicken:
- Place chicken cubes in a bowl or bag.
- Add ½ cup Greek dressing, toss to coat.
- Marinate for at least 2 hours in the fridge.
Preheat the Griddle:
- Set griddle to medium heat (around 375-400°F).
Cook the Chicken:
- Add 1 tablespoon avocado oil to the griddle.
- Place the marinated chicken on the hot surface.
- Let it sear for 5-7 minutes, then flip and cook until done.
Heat the Pitas:
- Add a little more avocado oil to the griddle.
- Place pitas down, letting them warm and get slightly crispy.
- Flip after 30-60 seconds until both sides are soft and golden.
Assemble the Gyros:
- Lay down a warm pita.
- Add chicken, lettuce, onions, tomatoes, and feta.
- Spoon on tzatziki and any extras like black olives.
- Serve & Enjoy:
- Wrap in foil or parchment for easy handling.
