Equipment

  • 2 Spatulas
  • 1 Blender or Food processor

Ingredients

  • 8 Chicken thighs, boneless skinless
  • 1 teaspoon Cumin
  • 4 whole Garlic cloves
  • 1 teaspoon Dried oregano
  • 2 teaspoon Kosher salt
  • 1 tsp Black pepper
  • 1 tablespoon Chillie powder
  • 2 tablespoon Olive oil
  • 1 7 oz can chipotles is adobo only use 4 peppers and all the sauce
  • ½ Cup Water

Instructions

  • Put everything except the chicken into a blender and mix together.
  • Add your newly blended marinade to the chicken in a ziplock bag and put in the fridge overnight or 8 hours.
  • Preheat your griddle to 400 degrees. Place your chicken on the griddle and add salt.
  • Cook for 6-8 minutes untouched. Flip and cook for a few more minute or until it reaches an internal temp of 175 degrees.
  • Remove from the griddle, let it rest for 5 to 10 minutes then dice and serve.
