Crepes might seem fancy, but they’re surprisingly easy to make on a griddle. This recipe creates light, slightly sweet crepes with a rich cream cheese filling, fresh strawberries, and chocolate syrup. Perfect for breakfast or dessert!

Key Takeaways:

  • This is a sweet crepe, but you can go savory—try ham and cheese, scrambled eggs, or sautéed mushrooms.
  • The cream cheese filling is the star—use it on pancakes or French toast too.
  • Spread the batter as thin as possible. The back of a ladle works great!

Ingredients

Crepe Batter

  • 2 large eggs
  • ½ cup of milk
  • ½ cup of water
  • 2 tablespoon butter melted
  • ½ teaspoon vanilla
  • 1 cup of all purpose flour
  • ¼ teaspoon of salt
  • ½ tablespoon powder sugar

Toppings

  • Strawberries & chocolate syrup

Instructions

Cream Cheese Filling

  • Mix together whipped cream cheese and pudding. Let it sit in the fridge for an hour or overnight.

Crepes

  • Combine all wet ingredients in a bowl or blender and mix well. You can use a wisk, but a hand mixer or using a blender is easier.
  • Add your dry ingredients and wisk or blend together until smooth. If you have a sifter, use that for the dry ingredients.
  • Heat griddle to 375 then add a small amount of oil and butter.
  • Using a ladel or ice cream scoop (2 oz) pour crepe batter on to the griddle. Use the back of the ladle to help spread it out the best you can.
  • Cook for 2 minutes, then flip and cook for 2 to 3 minutes on the other side.
  • Fill with the cream cheese filling then top with fresh fruit and or chocolate syrup.

Hey, I'm Johnny!

My first job out of college was running a diner, where I learned how to cook on a griddle. When COVID hit, I bought a griddle for myself and started making YouTube videos. Five years and 18 million views later, I now teach griddling full time. I help everyday folks get the most out of their Blackstone by keeping it simple, beginner-friendly, and real. These aren’t viral recipes—just the kind of food you'd actually make for your family.
