smashburgers

Arguably the most popular griddle meal and there's a reason why. You can't make em' like this on a grill and they're melt in your mouth good.

Smashburgers

My three takeaways.
1. Don't go bigger than 1/4 pound or you won't get a good sear.
2. Smash down as thins as you can.
3. They cook fast so have your buns toasted and all your toppings ready.

Ingredients

  • 1 lb 80/20 ground beef
  • 4 Hamburger buns brioche is my favorite
  • 1 tsp Salt and pepper
  • 4 slices American Cheese you can use other cheese but American just feels right

Instructions

  • Heat Griddle to 425 degrees. Add small amount of oil.
  • Weigh out beef into 4 ounce patties. Ball them up loosely you don’t want to pack the beef together to tight.
  • Salt and pepper on top then again when on griddle.
  • Toast the buns, because these will not take long so you want your buns done first.
  • Put down some oil. Place down burgers salt and pepper side down, then add more salt and pepper.Smash them as thin as possible. Using parchment paper so the beef doesn't stick to the press. If you don’t have a press like this you can use two spatulas to smash them down.
  • It takes only about 2 min or so on each side. If there’s holes that’s ok.
  • While it cooks set up toppings. Flip and then add the cheese.
  • Plate burgers on a bun and Enjoy!
