Just got your Blackstone griddle and don’t know what to cook first? These 5 beginner-friendly recipes are exactly what I wish I had started with when I bought mine 5 years ago. No fancy techniques, no weird ingredients — just solid meals that build your confidence and make your first few cooks a success.

Each one uses simple ingredients and takes advantage of the griddle’s space and heat zones. You’ll learn how to manage temperature, build flavor, and walk away with 5 go-to meals you’ll actually make again.

1. Stuffed Pancakes with Bacon

This is hands-down one of the best first meals to make on your Blackstone. It teaches you heat control, spacing, and cleanup. Plus, bacon helps season your griddle naturally.

  • Preheat your griddle to about 375°F (low on all burners for me, about 7 minutes)
  • Start with bacon on the griddle and flip every few minutes. Watch for hot spots.
  • Add some sausage patties if you want extra protein.
  • Scrape the griddle as bacon finishes to prep for pancakes.
  • Use a boxed pancake mix (I add vanilla extract and sour cream to mine). Pour with a 2 oz scoop.
  • Flip when bubbles form. Each side takes 3–4 minutes.
  • For the filling: mix 8 oz whipped cream cheese with 1 pudding cup (banana, vanilla, or lemon works great).
  • Stack 2–3 pancakes with filling in between, top with whipped cream and chocolate chips.

Tip: Eggs can be tricky. If you’re new, skip them at first and try this breakfast instead.

2. Ground Beef Tacos with Crispy Shells

An easy taco night upgrade you can only really pull off on a griddle. This one's perfect for learning how to brown meat and shallow fry all in one go.

  • Cook 1 diced white onion in avocado oil.
  • Add 1 lb ground beef and your favorite taco seasoning.
  • Once browned, remove and stir in 8 oz shredded cheese to make a cheesy filling.
  • Add oil to the griddle and lightly fry corn tortillas.
  • Spoon in the filling and fold them into crispy, golden tacos.

Tip: You can batch-fry 8–10 tacos at once thanks to the griddle space.

3. Sausage and Potato Scramble

This is a beginner-friendly egg recipe that lets you manage timing and griddle space with ease.

  • Start with frozen breakfast potatoes. Cook them in oil and don’t flip for 10–12 minutes.
  • Add ½ lb breakfast sausage and ½ diced onion.
  • Once the sausage is cooked, push to one side and make a dam.
  • Lower that burner to 300–325°F and pour in scrambled eggs.
  • Stir and cook slowly. Add cheese (and green chiles if you want).

Bonus: Wrap it all in a tortilla and you’ve got homemade breakfast burritos.

4. Italian Sausage Sandwiches with Peppers and Onions

This fairground classic is a must for any new griddle owner. It teaches you how to cook sausages through without burning and gets you comfortable managing multiple elements at once.

  • Cook 5 hot Italian sausages over medium heat, flipping often.
  • In a pan, warm up marinara sauce on the griddle.
  • Slice and cook red, yellow, and green peppers with a white onion in the sausage drippings.
  • Add salt, pepper, 1 tablespoon sugar, and ¼ cup red wine vinegar to the veggies.
  • Pile sausage, sauce, veggies, and provolone cheese onto sub rolls.
  • Wrap in foil to keep warm and soften the buns.

5. Chicken Fajitas

A backyard favorite that’s surprisingly simple and teaches you layering flavors and using the full surface.

  • Slice 1 lb of chicken breasts and marinate for 1–4 hours (bouillon, lime juice, oil, and seasonings).
  • Cook chicken at 375°F until golden and done.
  • Move chicken aside, then toss sliced peppers and onions in the seasoning left on the griddle.
  • Heat tortillas on the griddle, then build fajitas with guac, sour cream, pico, or cheese.
