Easy Blackstone Chicken Fried Rice

My three take aways.
1. When making fried rice on a griddle make a lot. Leftovers are great for lunches or meals later in the week.
2. I prefer chicken thighs because I think they don't dry out as much in this recipe but feel free to use breasts or tenders.
3. Don't skip the sesame oil, I really feel like this is what gives it the take out taste.

Ingredients

  • 2 cups uncooked jasmine rice cooked ahead and chilled –6 cups cooked
  • 1 tablespoon avocado oil
  • 1 stick Garlic butter purchase or use recipe below
  • salt and pepper to taste
  • 1.5 lb chicken breast or thighs cut into ½-inch pieces
  • 3 tablespoon Teriyaki sauce
  • cups frozen peas and carrots
  • 3 green onions chopped seperate whites and green parts
  • 4 eggs beaten
  • 4 tablespoon soy sauce
  • 1 tablespoon sesame oil for finishing

Garlic Butter

  • 1 stick butter unsalted softened
  • 2 cloves garlic minced
  • 1 teaspoon soy sauce

Instructions

Prep Ahead (day before if possible)

  • Take 1 stick of unsalted butter and let it sit out for about 1 hour to soften. Add 2 cloves of minced garlic and 1 teaspoon of soy sauce. Mix until fully combined.
  • Cook the rice the day before (or a few hours) and chill it in the fridge. On a parchment lined sheet pan.

Prep Ahead (1 hour before)

  • Cut the chicken into bite-sized pieces and toss with salt and pepper. Let it sit in the fridge for 1 hour while you finish prep.
  • Beat the eggs, chop the green onions and seperate out the white and green parts.
  • Collect the rest of your ingredients.

At the griddle:

  • Preheat griddle to 400 F (204 C) and add oil.
  • Place chicken on the griddle and cook for 5 minutes flipping halfway through. Then move it to the corner and add teriyaki.
  • Add 1 tbspn garlic butter to the griddle then peas, carrots, and white parts of green onions.
  • Season veggies with salt and pepper then after 2 minutes push the veggies to the corner with the chicken.
  • Add another tablespoon of garlic butter and spread it all over the griddle. Then place your rice down and add salt and pepper.
  • Let the rice sit for a minute then flip it and place veggies and chicken on top. No need to chop the rice it will break apart as it heats up.
  • After another 3-4 minutes start tossing everything together and your rice shoudl break apart.
  • Make a well in the middle of the rice and add a tablespoon of butter. After it melts pour your 3 scrambled eggs in there.
  • Let the eggs set up for 1 minute then start tossing everything together.
  • Pour on the soy sauce and mix everything again.
  • Cut the heat, drizzle on sesame oil and toss one last time.
  • Garnish with green onions, serve hot right off the griddle.
