Diner Style Omelet

If you love greasy spoon diners like I do then you will love making this omelet. Easy, fast, and it goes great with some diced breakfast potatoes.

Diner Style Omelet

My three take aways.
1. This isn't the pretties but man is it easy and delicious.
2. Make sure your griddle is between 300 and 325 or your eggs will cook too fast and might burn. I don't really like brown eggs on my temp omelet so I keep it low.
3. This is a generic Denver or Western omelet but feel free to spice it up with whatever meat and veggies you have on hand.

Ingredients
  

  • 3 eggs scrambled with a little water
  • 1 tbsp Onion diced
  • 1 tbsp Red Pepper
  • 1 tbsp Green Pepper diced
  • 2 tbsp Ham diced
  • ¼ Cup Cheddar Cheese shredded
  • 1 tbspn unsalted butter

Instructions
 

  • Preheat the griddle to 325 degrees the spready some oil around.
  • Add your onion, peppers, and ham to the griddle, Let them all cook for about 5 minutes
  • Add some salt and pepper to your veggies and ham the move them to the side.
  • Place down more oil and the butter then spread it around on the griddle top.
  • Slowly pour the eggs onto the griddle letting them spread out and cook.
  • After a minute or when the eggs look like they have set up add all you ingredients and the cheddar cheese.
  • Fold the eggs over the ingredients into a rectangle. Top with more cheese and enjoy!
