southwest Hash
So much flavor and so much fun. You really got to give this southwestern hash a try.
Southwestern Potato Hash
My three take aways.1. Chorizo is cheap and full of flavor start using it in more dishes,2. Breakfast Hash is a perfect griddle meal. Even if you don't plan it out just start grabbing veggies and meat from the fridge and throw it on the griddle.3. Always keep some tortillas around to turn things into tacos.
Course Breakfast
Ingredients
- 2 medium Redskin Potatoes
- 10 oz tube Chorizo
- ½ white onion chopped ideally the same size as the potatoes
- ¼ tsp cumin
- ¼ tsp paprika
- 1 tsp chili powder
- 1 tbsp salt and pepper
- 2 tsp garlic
- 6 corn tortillas
- 4 to order
- 1 tbsp Cilantro
Instructions
- Dice potatoes then steam in the microwave for two minutes. You don't have to steam fresh potatoes you can throw them right on the griddle but I like to soften them up a bit first.
- Pre heat griddle to 400 degrees
- Put potatoes down and add steak weight on top of them
- Add the chorizo to the griddle and chop up
- Add chopped onions
- Flip potatoes so all sides get brown.
- Add seasonings and garlic to the potatoes and onions then toss together.
- Warm tortillas on the griddle.
- Mix the chorizo with the potatoes and onions.
- Turn off a burner and move everything to that zone to stay warm.
- Add jalapenos to the griddle.
- Make your eggs to your liking.
- Place potatoes, veggies, and meat on your plate then top with eggs.
- Add some fresh cilantro and enjoy!
